Amounts are for 4 servings. Use the dinner planner to scale a whole week and build one grocery list.
Method
- Start the rice: cook 2 cups white rice per its package (about 3 1/2 cups water, 15–18 minutes).
- Heat the oven to 400°F and line a sheet pan. Pat the salmon dry and set it on the pan. Melt the butter with the minced garlic, the zest and juice of one lemon, and a pinch of salt, and spoon it over the salmon.
- Trim the green beans, toss them with the olive oil and a little salt, and scatter around the salmon.
- Bake 12–15 minutes, until the salmon flakes and the beans are tender-crisp. Serve over the rice with the second lemon in wedges.
