Turkey Chili

Lean, two-bean, and better the next day.

Ingredients

Canned kidney beans1 can
Canned black beans1 can
Canned diced tomatoes1 can
Tomato paste2 tbsp
Yellow onion1
Red bell pepper1
Garlic3 cloves
Chili powder2 tbsp
Ground cumin1 tsp
Olive oil1 tbsp

Amounts are for 4 servings. Use the dinner planner to scale a whole week and build one grocery list.

Method

  1. Dice the onion and pepper. Heat 1 tbsp oil in a pot over medium-high and cook them 3–4 minutes. Add the turkey and cook, breaking it up, until browned, about 6 minutes.
  2. Stir in the minced garlic, chili powder, cumin, and tomato paste and cook 1 minute.
  3. Add the diced tomatoes, the drained beans, and 1 cup water. Simmer 20–25 minutes, until thickened. Season with salt.
  4. Serve with your favorite toppings.
