Turkey & Zucchini Taco Skillet

One pan, extra veg — great in bowls or warm tortillas.

Ingredients

Taco seasoning1 packet

Amounts are for 4 servings. Use the dinner planner to scale a whole week and build one grocery list.

Method

  1. Dice the onion, pepper, and zucchini. Heat 1 tbsp oil in a large skillet over medium-high and cook the onion and pepper 3 minutes.
  2. Add the turkey and cook, breaking it up, until no pink remains, about 6 minutes. Stir in the taco seasoning and 1/2 cup water.
  3. Add the zucchini, the drained black beans, and the corn. Simmer until the zucchini is tender, 5–6 minutes.
  4. Sprinkle the cheese over the top, cover off the heat for 1–2 minutes to melt, and serve in bowls or tortillas.
